Boo'S Pecan Pie

  • 1 (9-inch) unbaked pie shell
  • 3 eggs
  • 1/2 c. sugar
  • 1 c. corn syrup
  • 1/8 tsp. salt
  • 1 tsp. vanilla
  • 1/4 c. butter, melted
  • 1 c. pecans

    Beat eggs slightly.

    Add sugar, syrup, salt, vanilla and butter.

    Put pecans in pie shell.

    Pour mixture over pecans.

    Bake at 350° for 60 to 70 minutes.

    To make an even, golden brown top, cut a strip of aluminum foil 30 inches long by 4 inches wide. Crimp this strip of foil around the rim of pie pan, forming a tent. Opening in center allows top to brown slower and crust not burn. Don't let foil touch top of filling.
