Beef Enchiladas

  • 1 lb. ground beef
  • 1 (10 oz.) can Old El Paso mild enchilada sauce
  • 1 (16 oz.) can tomato sauce
  • 1/2 c. chopped onion
  • 1 large can ripe pitted black olives
  • 2 boiled eggs
  • 1/4 to 1/2 lb. Velveeta cheese
  • 1 pkg. corn or flour tortillas

Directions

    Set aside 1/4 cup enchilada sauce.

    Brown ground beef in large, deep skillet.

    Boil 2 eggs.

    Slice into pieces black olives and eggs.

    Mix tomato sauce and remaining enchilada sauce with ground beef.

    Simmer 10 minutes.

    Also add onion at this time. Add black olives and eggs.

    Stir and simmer 10 more minutes. In large skillet, add 1 tablespoon oil and 1 tablespoon enchilada sauce.

    Turn on simmer and place tortilla in skillet until well coated.
