- 1 lb. ground beef
- 1 (10 oz.) can Old El Paso mild enchilada sauce
- 1 (16 oz.) can tomato sauce
- 1/2 c. chopped onion
- 1 large can ripe pitted black olives
- 2 boiled eggs
- 1/4 to 1/2 lb. Velveeta cheese
- 1 pkg. corn or flour tortillas
Directions

1Set aside 1/4 cup enchilada sauce.

2Brown ground beef in large, deep skillet.

3Boil 2 eggs.

4Slice into pieces black olives and eggs.

5Mix tomato sauce and remaining enchilada sauce with ground beef.

6Simmer 10 minutes.

7Also add onion at this time. Add black olives and eggs.

8Stir and simmer 10 more minutes. In large skillet, add 1 tablespoon oil and 1 tablespoon enchilada sauce.

9Turn on simmer and place tortilla in skillet until well coated.
