Beef Enchiladas

- 3 small pkg. flour tortillas
- 12 oz. can tomato paste
- 1 pkg. French's enchilada mix
- 10 oz. pkg. shredded Cheddar cheese
- 2 1/2 c. hot water
- 1 medium-sized onion, diced
- 1 (10 oz.) frozen peas, cooked
- 1 1/2 lb. ground beef
Directions

1Brown the ground beef and onion.

2Combine water, paste and French's mix and stir well.

3Heat tortillas until flexible.

4Dip tortillas in the sauce.

5Add the ground beef and peas and sprinkle with cheese.

6Roll and place on a cookie sheet.

7Leave a space between each enchilada.

8Pour remaining sauce over the enchiladas and cover with foil.

9Bake at 375° for 10 to 20 minutes.

10Then enchiladas freeze well.
