Beef Enchiladas

  • 3 small pkg. flour tortillas
  • 12 oz. can tomato paste
  • 1 pkg. French's enchilada mix
  • 10 oz. pkg. shredded Cheddar cheese
  • 2 1/2 c. hot water
  • 1 medium-sized onion, diced
  • 1 (10 oz.) frozen peas, cooked
  • 1 1/2 lb. ground beef

Directions

    Brown the ground beef and onion.

    Combine water, paste and French's mix and stir well.

    Heat tortillas until flexible.

    Dip tortillas in the sauce.

    Add the ground beef and peas and sprinkle with cheese.

    Roll and place on a cookie sheet.

    Leave a space between each enchilada.

    Pour remaining sauce over the enchiladas and cover with foil.

    Bake at 375° for 10 to 20 minutes.

    Then enchiladas freeze well.
