Beef Fajitas

  • 1 lb sirloin steak, cut into strips
  • 2 tbsp taco seasoning mix
  • 2 tbsp olive oil
  • 1 None red onion, cut into thin wedges
  • 1 None bell pepper, deseeded, thinly sliced
  • 1 (13.5 oz) can red kidney beans
  • 8 None tortillas, warmed
  • 3 oz Cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1 cup fresh cilantro leaves

Directions

    Coat beef with 1 tbsp taco seasoning. Heat 1 tbsp oil in a frying pan over high heat. Saute beef, onion and pepper for 4-5 mins, until browned. Set aside. Add remaining oil, beans and remaining taco seasoning. Cook for 3-4 mins, mashing beans. Return beef and onion to pan.

    Distribute filling between tortillas. Top with pepper, cheese, sour cream and cilantro. Wrap up and serve.
