Beef-Nacho Casserole

  • 1 lb. ground beef
  • 1 (12 oz.) chunky salsa
  • 1 small can whole kernel sweet corn, drained
  • 3/4 c. mayonnaise
  • 1 tsp. chili powder
  • 2 c. or more crushed tortilla chips
  • 2 c. Colby or Monterey cheese, shredded

    Heat oven to 350°.

    Brown meat and drain.

    Stir in corn, salsa, mayonnaise and chili powder.

    Layer 1/2 of meat mixture, chips and cheese in 2-quart casserole dish. Repeat layers.

    Bake for 20 minutes.

    Top with shredded lettuce, tomato, etc.
