- 1 1/4 lb. beef tenderloin
- 2 Tbsp. butter
- 1 1/2 tsp. salt
- dash of ground pepper
- 1/4 c. water
- 10 potatoes
- 6 Tbsp. butter
- 1 to 2 cloves minced garlic
- 3 Tbsp. finely chopped parsley
Directions

1In a skillet, heat butter until lightly brown.

2Add meat; brown well on all sides.

3Sprinkle with half the salt and pepper.

4Reduce heat; cover and let meat cook about 10 minutes.

5Turn once during cooking.

6Remove meat; cover with foil.

7Add water to pan.

8Heat and scrape drippings; strain juices.

9Peel potatoes; slice thinly. Layer into a greased baking dish.

10Sprinkle with remaining salt and pepper.

11Pour pan juices over.
