- 1 medium onion, thinly sliced and separated into rings
- 1 medium green pepper, thinly sliced
- 1 Tbsp. olive oil
- 1 1/2 lb. boneless beef chuck steak, cut into 1/2-inch cubes
- 1 (17 oz.) can stewed tomatoes
- 1 (10 3/4 oz.) can condensed beef broth
- 1 (6 oz.) can tomato paste
- 1 large potato, cut into 1/2-inch cubes
- 2 Tbsp. all-purpose flour
Directions

1Combine onion, green pepper and olive oil in a 3-quart casserole.

2Microwave at High until peppers are tender, 2 to 5 minutes.

3Stir in remaining ingredients.

4Cover; microwave at High for 10 minutes.

5Reduce power to Medium.

6Microwave until beef and potatoes are tender, 50 minutes to 1 hour, stirring after 30 minutes.

7Let stand 5 to 10 minutes.

8Serve over rice, noodles or potatoes, if desired.
