Ingredients
- 1 tablespoon oil
- 34 lb round steak, cubed
- 1 onion, chopped
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 5 cups beef broth
- 34 teaspoon dried oregano leaves
- 1 zucchini, cubed
- 4 ounces sliced mushrooms
- 15 ounces kidney beans, drained
- 14 teaspoon salt and pepper (to taste)
Directions

1Heat oil over medium heat.

2Add the beef, onion, carrots and celery.

3Cook until the meat is not pink and the carrots and celery are slightly tender.

4Add beef broth, oregano, salt & pepper to taste, bring to boil, then reduce heat and simmer for 45 minues uncovered.

5Then stir in zucchini, mushrooms and kidney beans and bring to a boil.

6Reduce heat and simmer for about 5-10 minutes.
