Beef Soup

Ingredients

  • shank bones with meat or short ribs of beef
  • 2 large onions
  • bay leaf
  • salt and pepper
  • 1 large can tomatoes
  • 3 qt. water
  • garlic

Directions

    Simmer meat for a couple of hours in the 3 quarts of water with the onion, garlic, bay leaf, salt and pepper and tomatoes. Remove meat from soup; discard bones (or save for your dog if you have done).

    Add vegetables of your choice (turnip, carrots, celery, potatoes) and a small head of cabbage the last half hour. Serve over noodles to make a hearty meat, or add a cup of rice the last half hour.
