- 1 lb. beef, cubed
- 3 large tomatoes
- 5 large white potatoes
- 1 lb. fresh carrots
- 1 lb. string beans
- 16 oz. corn (fresh or canned)
- 16 oz. tomato sauce
- 16 oz. tomato paste
- 1 large green pepper, chopped
- 1 Tbsp. parsley flakes
Directions

1Boil beef in a large pot for approximately 1 1/2 hours.

2Peel, cut and add potatoes to pot.

3Add fresh carrots, corn and celery. Let cook for one hour.

4Add tomato sauce and tomato paste.

5Let cook for 15 minutes.

6Slice tomatoes and place on top of stew.

7Let simmer for 15 minutes or until the soup has thickened.

8Can be served over a bed of rice or by itself.
