- 2 lb. stew beef, cut into 1-inch cubes
- 1 1/2 c. chopped onions
- 1 (10.5 oz.) can beef broth
- 1 clove garlic
- 2 1/2 tsp. salt
- 1/2 tsp. sweet basil
- 1/2 c. chopped celery
- 3 medium potatoes, diced
- 1/4 c. oil
- 1 (1 lb.) can tomatoes, cut up (I use about a qt.)
- 2 Tbsp. parsley flakes
- 1/4 tsp. pepper
- 1 bay leaf
- 6 chopped carrots
- cornstarch
Directions

1Brown stew beef in the oil in a Dutch oven.

2Add onions, tomatoes, beef broth, celery and spices.

3Cook until meat is tender.

4Add carrots and potatoes; cook until they are tender. Before serving, add enough cornstarch to thicken.

5Serves 8.
