- 2 lb. lean beef
- 2 Tbsp. flour
- 2 Tbsp. fat
- 2 c. water
- 1 can tomato sauce or 1 c. catsup
- 6 onions
- 6 carrots
- 6 potatoes
- 1 c. green peas
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/2 bay leaf
- 1/8 tsp. thyme
Directions

1Wipe pieces of beef with damp cloth and roll in flour.

2Brown in fat in heavy kettle or saucepan.

3Add water, tomato sauce and seasonings.

4Cover tightly; cook over low heat until almost tender, about 1 1/2 hours.

5Add prepared onions, carrots and potatoes.

6Cook 30 to 40 minutes longer.

7Just before vegetables are tender, add green peas and cook 5 to 7 minutes longer.

8Serves 6.
