- 1/4 c. flour
- 2 tsp. salt
- 2 lb. lean beef, cut in 1-inch cubes
- 2 Tbsp. vegetable oil
- 1 c. hot water
- 2 (8 oz.) cans tomato sauce
- 1/4 tsp. pepper
- 1/2 bay leaf
- 1/8 tsp. thyme
- 6 small carrots, sliced
- 6 small onions (whole)
- 6 potatoes, pared and quartered
- 1 c. sliced celery
Directions

1Combine flour and salt in a paper bag.

2Drop in beef, a portion at a time, and shake until coated.

3In a heavy kettle or pot, brown beef over low heat in hot oil.

4Stir water, tomato sauce and seasonings.

5Cover and simmer 1 1/2 hours.

6Add vegetables.

7Cover; simmer until vegetables are done.

8Serves 6.
