Stuffed "Ponce"

Ingredients

  • 1 small hog ponce
  • 3 lb. ground pork
  • 1 large bell pepper, chopped
  • 1 large onion head, chopped
  • 2 pods garlic, minced
  • 1 1/2 stems celery, chopped
  • 1 medium sized sweet potato, cut in cubes
  • 2 slices bread, soaked in milk
  • a handful of green onion tops and parsley
  • salt and red and black pepper to taste (use more red pepper)

    Clean ponce well.

    (Use pliers to remove inner film.)

    Put raw ground pork and other ingredients into bowl.

    Work well with hands until well mixed.

    Add seasoning.

    Stuff mixture into ponce.

    Sew it up.

    Place in a thick pot with enough oil to keep from sticking and cook over low heat.

    Add a little water from time to time and be careful not to break skin while handling.

    Cook, covered, for about 2 hours.
