  • 4 lb. lean ground beef
  • 2 Tbsp. liquid smoke
  • 1 tsp. oregano
  • 1/2 c. Morton Tender Quick
  • 1 1/2 tsp. coarse ground pepper
  • 1 tsp. garlic powder

Directions

    Mix together with hands and let stand in refrigerator for 24 hours.

    Divide into 4 equal parts and roll into log, working out air pockets.

    Wrap each log in 15-inch square cheesecloth and bake on oven racks with drip pan under for 4 hours at 225°.
