- 6 Tbsp. butter
- 2 lb. beef tenderloin
- pepper
- 1 c. sour cream
- 2 Tbsp. minced onion
- 1/2 lb. sliced mushrooms
- 1/8 tsp. nutmeg
Directions

1Melt 3 tablespoons butter in a heavy skillet.

2Add onion and cook slowly until transparent.

3Remove and set aside.

4Cut beef in 1 x 2 1/2-inch strips.

5Turn head to medium-high and cook briefly, turning to brown on all sides.

6Remove beef and set aside with onion.

7Add remaining 3 tablespoons butter to skillet.

8Stir in mushrooms; cover and cook 3 minutes.

9Season with pepper and nutmeg.

10Whisk sour cream and add to pan; do not allow it to boil. Return beef and onion to pan and just heat through.
