- 2 lb. beef sirloin
- flour
- 1/3 c. butter or oil
- 3 medium onions, chopped
- 1/2 lb. mushrooms, sliced
- salt and pepper
- 2/3 c. tomato juice
- 1/2 c. sherry
- 1 1/2 c. water
- 2/3 c. sour cream
Directions

1Cut meat in thin strips; dredge with flour.

2Brown quickly in skillet in half the butter.

3Remove the meat; add remaining butter.

4Add onions and mushrooms; cook 5 minutes.

5Add meat with salt and pepper.

6Add tomato juice, wine and water.

7Bring to boil; reduce heat, cover and simmer 2 hours or until meat is tender.

8Season to taste; stir in sour cream and serve.

9Excellent with wild rice.
