Beef Taco Mac

Ingredients

  • 1 lb. beef cubed steak
  • 1 Tbsp. vegetable oil
  • 1 medium onion, chopped
  • 1/4 tsp. salt
  • 1 (1.25 oz.) pkg. taco spices and seasonings
  • 2 (14 1/2 to 16 oz. each) cans diced tomatoes (undrained)
  • 1 1/2 c. uncooked rotini (spiral) pasta
  • 1/2 c. water
  • 1/2 c. shredded Cheddar cheese

Directions

    Cut beef steaks lengthwise into 1-inch wide strips, then crosswise into 1-inch pieces.

    Heat oil in Dutch oven over medium/high heat until hot (not boiling).

    Add beef and onion. Cook and stir 3 minutes and season with salt.

    Stir in taco seasonings, tomatoes, pasta and water into beef.

    Bring to a boil; reduce heat to low.

    Cover tightly and simmer 20 minutes or until pasta is tender.

    Sprinkle with cheese before serving.
