Beef Taco Mac

Ingredients
- 1 lb. beef cubed steak
- 1 Tbsp. vegetable oil
- 1 medium onion, chopped
- 1/4 tsp. salt
- 1 (1.25 oz.) pkg. taco spices and seasonings
- 2 (14 1/2 to 16 oz. each) cans diced tomatoes (undrained)
- 1 1/2 c. uncooked rotini (spiral) pasta
- 1/2 c. water
- 1/2 c. shredded Cheddar cheese
Directions

1Cut beef steaks lengthwise into 1-inch wide strips, then crosswise into 1-inch pieces.

2Heat oil in Dutch oven over medium/high heat until hot (not boiling).

3Add beef and onion. Cook and stir 3 minutes and season with salt.

4Stir in taco seasonings, tomatoes, pasta and water into beef.

5Bring to a boil; reduce heat to low.

6Cover tightly and simmer 20 minutes or until pasta is tender.

7Sprinkle with cheese before serving.

8Makes 4 servings.
