- 1 lb. fish fillets
- oil for deep frying
- 1 c. light pancake and waffle mix
- 1 tsp. lemon pepper
- 3/4 c. beer
- 1 egg
- 1 1/4 c. saltine cracker crumbs
Directions

1Pat fish dry with paper towels.

2Cut fish into serving size pieces.

3In deep fryer or heavy saucepan, heat 2 to 3 inches oil to 375°.

4In shallow dish, combine pancake mix, lemon pepper, beer and egg; mix until smooth.

5Place crumbs in another shallow dish.

6Dip fish into batter then into crumbs, covering completely.

7Fry in hot oil for 3 to 4 minutes, turning once, until golden brown and fish flakes with fork.

8Keep fish warm until all pieces are cooked. Serve with lemon wedges or tartar sauce, if desired.
