Beer Batter Oysters

- 40 oysters
- 1 egg
- 1 Tbsp. vegetable oil
- 1 c. beer
- 3 or 4 drops red hot sauce
- 1 1/2 c. flour
- 1/2 tsp. salt
- 1/4 tsp. coarse pepper
- 1/4 tsp. lemon juice
Directions

1Sift flour and salt into a bowl.

2Mix in pepper.

3Beat the egg and oil together and mix in hot sauce, beer and lemon juice. Gradually add this to the flour.

4Stir well to avoid a lumpy batter.

5Pat oysters dry on paper towel and put 5 or 6 at a time in the batter.

6Coat oysters evenly.

7Take oysters from batter and place in hot oil at 375° for about 1 minute or until brown.

8Remove from oil and place on paper towel.
