Beer Batter Oysters

Ingredients

  • 40 oysters
  • 1 egg
  • 1 Tbsp. vegetable oil
  • 1 c. beer
  • 3 or 4 drops red hot sauce
  • 1 1/2 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. coarse pepper
  • 1/4 tsp. lemon juice

    Sift flour and salt into a bowl.

    Mix in pepper.

    Beat the egg and oil together and mix in hot sauce, beer and lemon juice. Gradually add this to the flour.

    Stir well to avoid a lumpy batter.

    Pat oysters dry on paper towel and put 5 or 6 at a time in the batter.

    Coat oysters evenly.

    Take oysters from batter and place in hot oil at 375° for about 1 minute or until brown.

    Remove from oil and place on paper towel.
