  • 1 c. brown rice
  • 1 c. beer -- allowed to go flat
  • 1 1/4 c. chicken broth
  • 1 Tbsp. butter
  • 1/4 c. peanuts -- salted, coarsely minced
  • 1/2 tsp salt -- optional Freshly grnd black pepper -- to taste

Directions

    Preheat oven to 350 degrees F. Place all ingredients in a 2 1/2-qt casserole dish lightly coated with cooking spray or possibly oil.

    Cover and bake till all liquid is absorbed, about 1 1/4 hrs.
