- 4 whole Beets
- 2 teaspoons Olive Oil
- 1 pinch Salt

1Preheat oven to 350 degrees F.

2Scrub and peel (if you like) the beets.

3Slice thinly; if you have a mandoline, thats great, but if not, just use a regular knife like I did.

4Slicing thinly is key because this will reduce the cooking time and increase the crispiness factor.

5Toss in olive oil and salt and bake for 40 minutes or until the beets begin to crisp around the edges.

6Let rest for 5 minutes after baking and the beets will become even crispier.
