  • 4 whole Beets
  • 2 teaspoons Olive Oil
  • 1 pinch Salt

    Preheat oven to 350 degrees F.

    Scrub and peel (if you like) the beets.

    Slice thinly; if you have a mandoline, thats great, but if not, just use a regular knife like I did.

    Slicing thinly is key because this will reduce the cooking time and increase the crispiness factor.

    Toss in olive oil and salt and bake for 40 minutes or until the beets begin to crisp around the edges.

    Let rest for 5 minutes after baking and the beets will become even crispier.
