Ingredients
- 2 lb. beets
- 3 c. sugar
- 1 Tbsp. ground ginger
- 3 small lemons, very finely chopped
- 1 c. finely chopped almonds
Directions

1Cook whole beets until tender, in boiling water for about 30 minutes.

2Let cool; peel and dice.

3Combine diced beets, sugar and ginger in medium saucepan and cook over medium-low heat for 30 minutes.

4Add chopped lemon and continue cooking until slightly thickened, stirring occasionally to prevent sticking, about 30 minutes.

5Stir in almonds.

6Transfer to jars with tight-fitting lids and seal.
