- 4 lb. beets, cooked and peeled
- 4 large onions
- 3 large green peppers
- 1 Tbsp. whole cloves
- 1 1/2 c. sugar
- 1 1/2 c. vinegar
Directions

1Grind the beets, onions and green peppers.

2Tie the cloves in a cheesecloth bag.

3In a large kettle, combine the vegetables, clove bag, sugar, vinegar, 1/2 cup water and 1 tablespoon salt. Bring to a boil and then reduce heat.

4Cover; simmer 20 minutes, stirring occasionally.

5Remove clove bag.

6Ladle into hot jars and adjust lids.

7Put in boiling water bath for 15 minutes.
