Ingredients

  • 1 (16 oz.) can sliced beets, diced small
  • 1 c. celery, diced
  • 1 (3 oz.) pkg. lemon jello
  • pinch of salt
  • tiny bit of horseradish (optional)
  • 1 small onion, diced
  • 1/4 c. vinegar
  • 1/2 c. sugar
  • 1/4 c. Miracle Whip

Directions

    Drain beets, reserving juice.

    Dice beets.

    Add beet juice to vinegar to make 1 cup liquid.

    Add sugar and salt to liquid. Bring to a boil.

    Pour over jello, stirring until dissolved. Chill until cool.

    Add beets, celery and onion.

    Chill until set. Spread with Miracle Whip to which you have added a tiny bit of horseradish.

    Also good without the horseradish.
