- 2 (1 lb.) cans sliced beets
- 2/3 c. sugar
- 2 Tbsp. cornstarch
- 1/2 c. white vinegar
- 1/2 tsp. salt
- 1/4 c. oleo
Directions

1Drain beets, reserving 1/2 cup liquid.

2Mix sugar and cornstarch in a saucepan.

3Blend in reserved beet liquid, vinegar and salt.

4Bring to a boil, stirring constantly.

5Reduce heat; simmer for 2 minutes.

6Add beets and simmer for 15 minutes longer.

7Stir in butter before serving.
