- 2 lb. asparagus spears, cleaned and trimmed
- 3 tsp. wine vinegar
- 1/2 c. olive oil
- 1 tsp. parsley flakes
- 1/4 tsp. garlic powder
- 6 hard-boiled eggs, chopped
- 6 Tbsp. bacon bits
- salt and pepper to taste
Directions

1Steam asparagus until tender-crisp; drain.

2Make dressing with oil, vinegar, garlic powder, parsley flakes, salt and pepper. While asparagus is hot, layer half the spears in a deep dish. Sprinkle half the chopped eggs and bacon bits over asparagus and half the dressing.

3Make a second layer of asparagus spears.

4Top with remaining chopped eggs, bacon bits and dressing.

5Serve at room temperature or chill.
