Bermuda Salad

Ingredients

  • 1 c. salad oil
  • 1/2 c. tarragon vinegar
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1 small head cauliflower, separated into flowerets
  • 1/2 large Bermuda onion, thinly sliced and separated into rings
  • 1/3 c. sliced stuffed olives
  • 1/2 c. crumbled Roquefort or Blue cheese
  • 1 small head lettuce, shredded and chilled

    Combine first 5 ingredients in jar.

    Shake vigorously.

    In a large bowl, combine cauliflower, onion rings and olives.

    Pour dressing over vegetables.

    Cover; marinate several hours in refrigerator, turning occasionally.

    Toss with cheese and lettuce just before serving.

    Makes 6 to 8 servings (about 10 cups).
