Ingredients
- 1 c. salad oil
- 1/2 c. tarragon vinegar
- 2 tsp. sugar
- 1 tsp. salt
- 1/2 tsp. paprika
- 1 small head cauliflower, separated into flowerets
- 1/2 large Bermuda onion, thinly sliced and separated into rings
- 1/3 c. sliced stuffed olives
- 1/2 c. crumbled Roquefort or Blue cheese
- 1 small head lettuce, shredded and chilled
Directions

1Combine first 5 ingredients in jar.

2Shake vigorously.

3In a large bowl, combine cauliflower, onion rings and olives.

4Pour dressing over vegetables.

5Cover; marinate several hours in refrigerator, turning occasionally.

6Toss with cheese and lettuce just before serving.

7Makes 6 to 8 servings (about 10 cups).
