- 2 c. milk
- 4 egg yolks
- 1/2 c. granulated sugar
- 2 Tbsp. flour
- 1/2 tsp. cornstarch
- 1/2 c. mascarpone cheese
- 1 Tbsp. butter
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- 2 c. berries (raspberries, blackberries, blueberries)
- 2 Tbsp. granulated sugar
Directions

1Preheat broiler.

2Scald milk. Pour into saucepan. Heat just until bubbles form along edge; do not boil.

3Remove from heat. Skim. Combine yolks and 1/2 cup of sugar in a bowl. Whisk until smooth. Add flour and cornstarch. Add scalded milk and return mixture to saucepan.

4Stir over low heat until thickened.

5Add cheese, butter, lemon juice and vanilla. Stir until smooth. Remove from heat and spoon cream into bottom of quiche pan. Arrange berries on top and press lightly into cream. Sprinkle sugar on top.

6Run under broiler until lightly browned. Yields 6 servings.
