Berry Couscous

Ingredients

  • 1/2 tsp thyme
  • 1 tbs orange peel
  • 2 cups apricot nectar
  • 1 1/2 cups water
  • 1 1/2 cup Israeli couscous
  • 1 1/2 cup dried cranberries or cherries
  • 3 tbs white rice wine
  • 1/2 cup vegetable oil
  • 1/2 - 3/4 cup chopped walnuts (or substitute)

Directions

    Put couscous, thyme, orange peel, juice,and water in medium saucepan.. Bring to boil, then cover, and slow simmer for 10 minutes. Add dried berries. Cover and simmer another 5 minutes. Remove from heat, keep covered for 10 - 15 minutes.

    Add oil, rice wine, and nuts. Stir to mix thoroughly.

    Top with whipped cream if desired.

    Eat warm or cold.
