- 2 tbsp olive oil
- 2 tbsp fresh rosemary leaves
- 2 tbsp fresh thyme leaves
Directions

1Preheat the oven to 350°F.

2Rub beef with oil. Sprinkle with herbs and season to taste. Place on a rack in a roasting pan.

3Roast for 2 hours 20 mins for medium, or until cooked to desired doneness. Loosely cover with foil. Rest for 15-20 mins before carving.
