Berry Ice Cream Cake

  • 4 oz white chocolate, melted
  • 4 tbsp (1/2 stick) butter, melted
  • 1 None egg
  • 3/4 cup flour
  • 2 tbsp self-rising flour
  • 3/4 cup sugar
  • 1/3 cup white chocolate chips
  • 1/3 cup macadamia nuts, chopped
  • 2 quarts vanilla ice cream, softened
  • 2 cans (15 oz each) mixed berries in light syrup, drained, reserving syrup

Directions

    Preheat the oven to 350°F. Grease and line bottom and sides of a 9 inch springform pan with parchment paper, extending paper 1 inch above rim of pan.

    Mix melted chocolate, butter, egg, flours, 1/2 cup of the sugar, chocolate chips and macadamias in a large bowl. Press into bottom of prepared pan.

    Bake 25 mins, or until lightly browned. Cool in pan in wire rack.

    Mix ice cream and berries. Spoon over crust, smoothing top. Cover and freeze 2 hours.

    Heat reserved syrup in a small saucepan. Add remaining 1/4 cup sugar; cook and stir until sugar dissolves. Boil 2 mins, or until reduced by half; cool. Slice cake. Serve drizzled with syrup.
