- 2 medium onions, chopped
- 1 c. celery, sliced
- 1 tsp. dried basil
- 2 cloves garlic, minced
- 1 tsp. dried parsley
- 4 flounder fillets
- 2 tomatoes, chopped
- lemon/lime slices
- 2 c. tomato juice
Directions

1Preheat oven to 350°.

2Saute onions and celery in oil for 2 minutes until tender.

3Mix garlic and parsley.

4Spread over flounder fillets in a baking dish.

5Cover with chopped tomatoes and lemon or lime slices.

6Pour tomato juice over that until it covers bottom of the dish.

7Bake 30 minutes.

8Makes 4 servings.
