  • 2 medium onions, chopped
  • 1 c. celery, sliced
  • 1 tsp. dried basil
  • 2 cloves garlic, minced
  • 1 tsp. dried parsley
  • 4 flounder fillets
  • 2 tomatoes, chopped
  • lemon/lime slices
  • 2 c. tomato juice

    Preheat oven to 350°.

    Saute onions and celery in oil for 2 minutes until tender.

    Mix garlic and parsley.

    Spread over flounder fillets in a baking dish.

    Cover with chopped tomatoes and lemon or lime slices.

    Pour tomato juice over that until it covers bottom of the dish.

    Bake 30 minutes.
