- 1 12 cups mashed bananas (4-5 medium bananas)
- 34 cup wheat flour
- 34 cup all-purpose flour
- 12 teaspoon baking soda
- 13 cup margarine, at room temperature
- 23 cup Splenda sugar substitute
- 2 eggs, separated
- 18 teaspoon milk
- 14 teaspoon nutmeg
- 4 tablespoons flax seeds
- 1 teaspoon cinnamon
- 12 cup walnuts, chopped
Directions

1Preheat oven to 350.

2Spray glass loaf pan with cooking spray.

3Seperate egg yolks from egg whites.

4Put egg whites to the side.

5Combine flour, baking soda, splenda, flax seed, cinnamon, nutmeg and walnuts into a bowl.

6In a separate bowl, blend bananas together until mush.

7Mix in butter, milk, sugar and egg yolks until creamy.

8Combine dry ingredients slowly until well mixed.

9Take egg whites and beat until stiff peaks form.

10Fold into banana mixture.

11DO NOT BEAT into mixture.

12Fold in with large spoon.

13Pour mixture into loaf pan.

14Bake for 45 minutes or until toothpick inserted in comes out clean.
