- 2 c. dried split peas
- ham hocks or bacon (2 hocks or 1 lb. bacon)
- 3 Tbsp. dried onions
- 1/4 tsp. celery salt
- 3/4 tsp. salt
- 2 qt. water
- 1/2 tsp. basil leaves
- 1/4 tsp. pepper
Directions

1Rejuvenate the dried onions in 1/2 cup of water.

2Cook the ham hocks until they are done.

3Clean the meat out and discard the skin, gristle and bone.

4Use this water to cook the split peas. Always wash the hocks well.

5Strain the liquid before you put it in with the peas.

6When the peas are done, put the spices and onions in and simmer.

7Taste; add salt or whatever until it is right.
