- 1 small yellow onion
- 1 small green bell pepper
- 1 cup fresh sliced mushrooms
- 2 eggs
- 2 cups Minute Rice
- 2 cups chicken broth
- soya sauce
- salt
- pepper
- olive oil
Directions

1bring chicken broth to a boil, remove from heat. add minute rice and let stand for 10-15 mins, until water is absorbed, fluff with fork.

2meanwhile in a non stick skillet, sautee onions and green pepper with a pinch of salt and pepper in 1 tbsp of olive oil until lightly browned. add mushrooms and sautee until cooked. push all ingredients to the side of the pan and scramble eggs on the other side until cooked. add rice, and soya sauce to taste. enjoy!
