- 1 large eggplant, cooked and mashed
- 1 beaten egg
- 1 large chopped onion
- 1 Tbsp. Worcestershire sauce
- 2 Tbsp. bacon drippings
- 1 c. bread crumbs
- 1 tsp. salt
- pepper to taste
- 1 c. grated cheese
- 1/2 tsp. garlic salt
Directions

1Combine eggplant with egg, onion, salts, pepper and Worcestershire sauce.

2Add melted drippings.

3In a casserole, layer eggplant, crumbs and 3/4 cup cheese. Bake at 350° for about 20 minutes. Sprinkle top with remaining cheese.

4Bake for about 10 more minutes. Very good.
