  • 1 large eggplant, cooked and mashed
  • 1 beaten egg
  • 1 large chopped onion
  • 1 Tbsp. Worcestershire sauce
  • 2 Tbsp. bacon drippings
  • 1 c. bread crumbs
  • 1 tsp. salt
  • pepper to taste
  • 1 c. grated cheese
  • 1/2 tsp. garlic salt

Directions

    Combine eggplant with egg, onion, salts, pepper and Worcestershire sauce.

    Add melted drippings.

    In a casserole, layer eggplant, crumbs and 3/4 cup cheese. Bake at 350° for about 20 minutes. Sprinkle top with remaining cheese.

    Bake for about 10 more minutes. Very good.
