- 5 c. flour
- 2 tsp yeast

1One way I have come across to improve my bread is to use old Dough.

2Now what I mean is I make a 6 c. batch of plain dough.

3yeast water and flour.

4I let it rise twice nice and slow.

5then put it in the refrigerator.

6So before I make bread I bring it out and let it hot up.

7The amount of the old dough in the new is not super critical.

8I use about 4 c. of it to 12 c. of flour.

9I then use far less yeast.

10about a tsp.

11compared to a Tbsp..

12This will change good bread into great bread.

13It is not sourdough so it does not really change the taste of bread.

14just makes it better.

15Makes the dough handle better too.

16I take a small piece and make a batch of dough with 5 c. flour and about 2 tsp yeast.

17let it rise most of the day and then back into the fridge.
