Better Brussels Sprouts

  • 3 to 3 1/2 lb. Brussels sprouts
  • 2 1/2 Tbsp. unsalted butter
  • 2 1/2 Tbsp. olive oil
  • 8 cloves garlic, coarsely chopped
  • 1 c. chicken broth
  • salt and black pepper to taste
  • 2 Tbsp. unsalted butter, melted
  • 2 Tbsp. chopped parsley
  • freshly squeezed lemon juice (optional)

Directions

    Cut stem ends from sprouts and remove outer yellow leaves. Cut an X in bottom of each sprout.

    Rinse in cold water, drain and pat dry.

    Over low heat, melt 2 1/2 tablespoons butter with oil in a large, heavy pot.

    Add garlic; cook for 2 1/2 to 3 minutes, or just until garlic starts to change color.
