Better Brussels Sprouts

- 3 to 3 1/2 lb. Brussels sprouts
- 2 1/2 Tbsp. unsalted butter
- 2 1/2 Tbsp. olive oil
- 8 cloves garlic, coarsely chopped
- 1 c. chicken broth
- salt and black pepper to taste
- 2 Tbsp. unsalted butter, melted
- 2 Tbsp. chopped parsley
- freshly squeezed lemon juice (optional)
Directions

1Cut stem ends from sprouts and remove outer yellow leaves. Cut an X in bottom of each sprout.

2Rinse in cold water, drain and pat dry.

3Over low heat, melt 2 1/2 tablespoons butter with oil in a large, heavy pot.

4Add garlic; cook for 2 1/2 to 3 minutes, or just until garlic starts to change color.
