  • 2 cups cider vinegar
  • 1 cup water
  • 1 cup sugar
  • 14 teaspoon pickling spices
  • 12 teaspoon mustard seeds
  • 12 onion (halved)
  • 1 large bay leaf
  • 1 12 teaspoons peppercorns
  • 12 bunch dill (minced)
  • 4 beets (cooked, peeled, sliced)
  • 6 hard-boiled eggs (peeled)

Directions

    Bring the vinegar, water, sugar, pickling spice, seeds, onion, bay leaf, peppercorns and dill to a boil.

    Reduce.

    Cover.

    Simmer 30 minutes.

    Let cool.

    Add the beets and eggs.

    Cover.

    Chill at least 72 hours.
