Big-Batch Bean Soup

Ingredients
- 6 lb. dry white beans (3 1/2 qt.)
- 7 gal. ham or chicken stock
- 8 ham bones
- 2 3/4 c. shredded carrots (1 lb.)
- 4 1/2 c. finely chopped onion (2 lb.)
- 2 tsp. pepper
- 2 c. all-purpose flour
- 3 c. cold water
Directions

1Rinse beans.

2Place in a large kettle with stock and ham bones. Bring to a boil.

3Reduce heat; cover and simmer for 2 to 3 hours or until beans are tender.

4Stir in carrots, onion and pepper.

5Cover and simmer for 30 minutes.

6Combine flour and cold water until smooth.

7Gradually stir into soup.

8Cook for 10 minutes.

9If too thick, add more water.

10Serves 100 or makes 6 1/4 gallons.
