  • 4 eggs
  • 1 c. milk
  • 1 c. flour

    To make this fluffy pancake you first must have the correct pan.

    Mine is a heavy cast-iron 3 1/2-quart casserole with sloping sides.

    First heat the pan with butter at 425° until butter is melted.

    Then in a blender combine eggs, milk and flour.

    Pour batter into hot melted butter.

    Don't peek for 20 to 25 minutes. This makes an easy weekend breakfast served with lemon juice and powdered sugar or maple syrup.
