- 1 c. flour

1To make this fluffy pancake you first must have the correct pan.

2Mine is a heavy cast-iron 3 1/2-quart casserole with sloping sides.

3First heat the pan with butter at 425° until butter is melted.

4Then in a blender combine eggs, milk and flour.

5Pour batter into hot melted butter.

6Don't peek for 20 to 25 minutes. This makes an easy weekend breakfast served with lemon juice and powdered sugar or maple syrup.
