- 2 cups Balsamic Vinegar
- 1 cup Sugar
- 4 whole Potatoes (any Kind You Like That You Would Use For Baking...one Large Potato Per Person)
- 1/2 cups Olive Oil
- 1 pinch Salt To Season
- 1 cup Crumbled Gorgonzola Cheese (you Can Use More Or Less Depending On Your Tastes)

1First, you want to get the balsamic glaze started because you want it to cook the longest.

3Pour the balsamic vinegar and sugar into a small pot.

5Put the stove on low heat and keep stirring occasionally, making sure the sugar dissolves and doesnt stick to the bottom and burn.

7Keep simmering on low heat for as long as you can so that the mixture reduces and thickens enough that it still coats a spoon after you put a spoon in and out of it.

8It should stay on reducing (with you occasionally stirring) for at least 30 minutes, but the longer the better (Ive gone as long as two hours!

13Pre-heat oven to 400 degrees.
