- 4 bitter melon Medium Sized
- onion A Quarter of an
- salt to Taste
- 1 chilli pepper Fresh
- 2 cloves garlic
- 1 teaspoon curry spices
- 1 teaspoon vegetable oil

1PREPARATION: Make sure the bitter melon is not fully mature or you will find that the seeds would be very hard and the dish won't be enjoyable when you eat it.This is the key to this dish the size of the melons.

2Fill a medium sized bowl filled with cold water then add 2 tablespoons of salt to it and put aside .

3Wash and cut the bitter melon into thin circles.

4Once you have done that put the bitter melon in the bowl and soak it for half an hour.

5Why you may ask and some of you have already guessed it. The answer is simply to take some of the bitterness away.

6While the melon is soaking prepare the rest of the ingredients by dicing the onion and chilli pepper and the garlic.

7COOKING: In a medium fry pan add the oil and let it heat on medium high heat .

8Take the bitter melon, pat dry with paper towel and add to the pan.

9Slowly cook for about 10 minutes stirring it occasionally.

10Make sure during this cooking process the water is evaporating from the melon and making it dry:)

11Once the melon has changed colour from green to a nice golden colour add all the other ingredients and stir thoroughly.

12Cook for another five minutes on a higher temperature till the bitter melon is nice and crispy.
