  • 1 medium tomato, seeded and chopped
  • 1 Tbsp. snipped parsley
  • 1 Tbsp. lime juice
  • lettuce leaves
  • 1 c. cooked black beans
  • 1/2 c. shredded Cheddar cheese
  • 1/4 c. prepared light Italian dressing
