  • 1 can black beans, drained and rinsed
  • 1 cup chopped onion
  • 2 cloves garlic
  • 1/2 cup green bell pepper
  • 2 chili peppers
  • 1/4 cup chopped cilantro
  • 1 cup chopped carrots
  • 1 cup chopped potato
  • 1 tbsp. chili garlic sauce
  • 1 tsp ground cayenne pepper
  • 1 tsp ground cumin
  • 1 tsp salt
  • black pepper to taste
  • 1 tbsp. corn starch
  • 1/4 cup dry bread crumbs

    1. Boil the carrots and potato until cooked and roughly mash.

    2. Place the onion, garlic, bell pepper, chili pepper, and cilantro in a food processor and chop fine.

    3. Add black beans to the food processor and purse until coarsely chopped.

    4. Place all ingredients into a large bowl. Combine well.

    5. Form into 6 patties. At this point, patties can be frozen on wax paper on a cookie sheet then bagged when completely frozen.

    6. Fry patties in a non-stick pan with a spray of Pam. Allow them to cook for several minutes on one side to completely brown it before flipping. Patties can be fried from frozen, partially frozen, or thawed - adjust cooking temperature and time accordingly.
