- 1 1/2 cups black beans cooked
- 13 cup carrots minced
- 13 cup celery minced
- 1 tablespoon garlic minced
- 1 teaspoon oregano dried
- 1/2 teaspoon coriander ground
- 1 teaspoon cumin ground
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 1 tablespoon cilantro fresh chopped
- 1 x cilantro fresh, or parsley, chopped
Directions

1Coarsely mash half the beans by hand.

2Add the remaining whole beans and all of the other ingredients, blending well.

3Cover and chill.

4Garnish with cilantro or parsley.

5Makes about 2 3/4 cups of dip.
