  • 15 ounce can cooked black beans drained and lightly rinsed
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 4 scallions chopped
  • 1/8 cup chopped cilantro
  • Dressing
  • 6 tbsp olive oil
  • 3 tbsp lime juice
  • 1 tbsp rice vinegar
  • 1 tsp ground cumin
  • 1 clove garlic, minced
  • salt to taste

    Mix beans, corn, red pepper, scallions an cilantro together in large bowl. In another bowl, combine remaining ingredients and poor the dressing over the black bean mixture. Cover the salad and let it marinate in refrigerator for 1 hour. Serve chilled.
