  • 2 cans (15 oz.) black beans, rinsed and drained
  • 1 can (17 oz.) whole kernel corn, drained
  • 2 large tomatoes, seeded and chopped
  • 1 large avocado, peeled and chopped
  • 1 red onion, chopped
  • 1/4 cup fresh cilantro-chopped
  • 3 to 4 T. lime juice
  • 2 T. olive oil
  • 1 T. red wine vinegar
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Directions

    Combine all ingredients in a large bowl.

    Cover and chill for several hours so flavors can blend.

    Serve with tortilla chips. Makes 6 cups of salsa.
