- 1 pint black beans
- 2 quarts water
- 1 onion
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 12 tablespoons butter
- 1 12 teaspoons flour
- 1 egg (hard boiled)
- 1 lemon
Directions

1Wash and soak beans overnight in 2 quarts water.

2In the morning add onion and simmer until beans are soft.

3Add more water if necessary.

4Rub through a sieve and re-heat.

5Add seasoning and butter and flour rubbed together.

6Just before serving add thin slices lemon and egg.
